Lighten Up Lancaster’s Menu Makeover
The Lighten Up Lancaster Coalition, an innovative community initiative powered by Lancaster General Health/Penn Medicine, offers free consulting to nonprofits providing free community meals to those in need. Lighten Up and LGH/Penn Medicine are valued members of the Hunger-Free Lancaster County Coalition.
One church volunteer recently asked Lighten Up Lancaster for help with a menu items that can be made ahead and frozen or refrigerated to take to a family in need, noting that there always seems to be a lot of pasta dishes donated. Lighten Up Lancaster offered a menu of Black Bean Taco Soup with Whole Grain Cornbread and a Basic Beef Stew with Carrots and Mushrooms, recipes for which can be found on the Lighten Up Lancaster website under “Healthy Recipes.”
